Black Rock Griddle Cakes!

Let us start with Breakfast (can also serve as lunch if it's a Sunday ;-)
Possibly the best pancakes ever-


For the dry mix (I suggest you make this in advance- in case you go out more than one night a week or like a warm breakfast often)

190g Plain Flour
2 x 'heaped' tablespoons of Caster Sugar
4 x 'level' teaspoons of Baking Powder
1/2 (half) teaspoon of Salt





To make the pancakes


1/2 (half) a mug of the mix
1 Egg
75-125ml Milk (Depends on the size of the egg, therefore add less to start)
1/4 (quarter) pack of Butter

Put a large non-stick frying pan on a low heat.
In a bowl place the mix, egg and milk- hand whisk together.
Melt the butter and place in the bowl also, ensure you whisk quickly so that the egg does not cook and scramble due to the hot butter.

When completely mixed the consistency should be slightly thicker than double cream, if too thick add a drop more milk.

Place four large, even spoons (of the mix) in the frying pan trying not to let them touch each other.

Cook on one side until lightly golden and the bubbles have shown through on the upper side. Flip over and cook on the other side.

Serve with

.Vanilla Strawberries
.Sliced Banana or Grilled Bacon with Maple Syrup
